Coconut Confectionery : Narali Pak / नारळी पाक
Narali Pak / Olya Naralachi vadi - नारळी पाक / ओल्या नारळाची वडी
Coconut has a great influence on SKP food. This is because of the geographical location of the inhabitants and the proximity to the sea.
I grew up under the shadows of coconut trees. My entire summer holidays went around coconut trees and coconuts related dishes made by my grandmother, mother, and aunties. The aroma of food made in our house, hold a special place in our hearts, now when I recreate my grandmother's recipe, the aroma makes me nostalgic.
We SKP's are true coconut lovers. Coconut is present is our starters, main course, dessert, and in what not. Today I will talk about coconut confectionery which is Narali pak or Olya naralichi vadi नारळी पाक / ओल्या नारळाची वडी with a small twist.
Procedure:
Ingredients:
Fresh Coconut (large) - 1 grated
Sugar - 3/4th cup
Coconutmilk - 1/4th cup
Green Cardamom Powder: 1/4th tsp
Clarified butter/ Ghee - 2 tsp
Rose syrup(roohafza) - 2 tbsp
Pistachio - 3 tsp ( for garnishing)
Method:
1) Take a nonstick cooking pot on medium flame to add freshly grated coconut into it. Dry roast it for 3-4 mins until the coconut water dries away.
2) Add coconut milk along with sugar and give a nice mix.
3) Add green cardamom powder to it and combine well.
4) Make sure you are stirring continuously until the coconut mixture is dry.
5) Add rose syrup in the coconut mixture and combine well. ( rose syrup is optional you can prepare without rose syrup)
6) Take a plate and grease it with clarified butter/ghee, Add the hot coconut mixture in it. With the help of plastic gloves or plastic bags in hand or spatula, spread the coconut mixture evenly on the plate.
7) Add chopped pistachio on Coconut mixture and let it rest for 6-7 hrs.
8) Once your coconut mixture is rested you can cut in even pieces and demold it.
