Pineapple Curry / अननसा ची आमटी
Pineapple curry is a summer meal. As Pineapple is considered as a summer fruit, it contains hydrating elements along with bromelain which helps in good digestion. But it doesn’t stop here. Pineapple is accompanied by coconut, a vital ingredient of SKP cookbook that makes this recipe healthier.
When it comes to spend summer holidays together with a big fat family, all start hunting for fish, but this versatile fruit is a trending substitute for fish. Pineapple curry is prepared in all the corners of India, there are many versions of it in curry. Let's see our SKP 's style pineapple curry.
Ingredients:
Chopped Pineapple (ripe) -
1/2 cup small chunks
1/2 cup finely chopped
Cashew nuts - 1/4th Cup (split in 2 half)
Green chilies - 2
Mustered seeds - 1 tsp
Pinch of Asafoetida (हिंग)
Cumins seeds - 1 tsp
Curry leaves 4-5
Gram Flour - 2 tsp
Turmeric powder - 1/4 tsp
Salt as per requirement
Water - 1 cup
Jaggery- 2 tsp
Tamarind pulp - 3 tsp (depends on the sweetness of pineapple adjust the amount of tamarind to be used)
Oil - 2 Tbsp
Grated coconut - 1 tbsp
Coconut Milk - 1/2 cup
Coriander for garnishing
Procedure:
1) Take a cooking pot to add oil in it on low flame. Once the oil is hot add asafoetida, split chilies, split cashew nuts, grated coconut along with chopped pineapple, and combine well. Keep the lid on the cooking pot for 5mins.
2) Once the pineapple mixture is nicely cooked add turmeric powder, gram flour, and salt to taste in it. Mix until it starts releasing its aroma. Add water and simmer with the lid on.
3) Add tamarind pulp and jaggery in the mixture and give a nice stir. Bring the mixture to simmer. (check the consistency,if required add a small amount of warm water in it.)
4) Add Coconut milk to the mixture and mix well. Let it simmer for a while.
5) Take a tempering pot on low flame to add oil in it. Once the oil is hot, add mustard seeds. cummin seeds and curry leaves.
6) Add this tempering mixture on pineapple curry and turn off the stove. Garnish the curry with coriander.
Pineapple curry is ready!
Pineapple curry can be served with puris/pooris, phulka, chapati or rice.
