Stuffed Pomfret / पुरणाचे पापलेट
I have no clue how many times I have edited my first line. It is so difficult to express our love for fish. Fish is one of our staple food. SKP's are well known for their own fish recipes. Seafood is a coastal treat for us, there are a variety of fishes with various recipes.
Today we are going to write on a very famous fish which is cherished by everyone, non-other than pomfret. Here are some interesting facts about Pomfret. This fish belonging to the family Bramidae. The family currently includes 20 species across the globe. The earlier form of the pomfret's name was pamphlet a word which probably ultimately comes from Portuguese pampo. They are found in the Atlantic, Indian, and Pacific Oceans. This fish is introduced by foreigners in India
Let's begin with the recipe crusty stuffed pomfret. Many other communities do prepare stuffed pomfret. We are sharing SKP's style stuffed pomfret / पुरणाचे पापलेट.
Ingredients:
Pomfret (पापलेट): 1 (big in size)
Grated coconut: 3/4th cup
Green chilies: 1-2 pieces ( depends on the spiciness of the chilies)
Coriander: 1/4th cup
Salt to taste
Rice flour: 2 tbsp
Semolina (Rava / रवा) : 2 tbsp
Lemon juice: 1/2 tbsp
Panckalshi masala (SKP masala): 1 tsp
Red chili powder: 1 tsp
Ginger garlic paste: 1/2 tbsp
Garlic: 1-2 cloves (for stuffing)
Oil : 3 tbsp
Turmeric: 1 tsp
Cotton thread: 1/2 meter
Ingredients For Marination:
Panchkalshi masala: 1 tsp
Ginger garlic paste: 1/2 tbsp
Lemon juice: 1/2 tbsp
Tumeric: 1 tbsp
Salt to taste
Procedure for Stuffing Mixture (पापलेट मध्ये भरायचे पुरण):
Take a grinder to add grated coconut, green chilies, salt, garlic cloves & coriander. Add 1/4 cup of water. Blender it together to get thick chutney texture.
*Note: Stuffing needs to be thick and dry.
Procedure for Stuffed Pomfret (पुरण भरायची पद्धत ):
While purchasing the pomfret ensure that they are not cut in pieces or head is chopped off. It is recommended in the case of pomfret that cutting is done by ourselves to have the desired shape.
With a sharp knife cut the fins, give a deep vertical cut below the fish mouth. Remove all the
internal organs, eyes, and clean the fish thoroughly. Again with the sharp knife extend the pocket to fill in the stuffing.
Marination (मॅरिनेशन):
Apply turmeric powder, panchkalshi masala, lemon juice, ginger-garlic paste in the pocket, and both sides of fish. Let it marinate in the fridge for 1-2 hours.
Method (कृती):
1) Take a bowl to add panchkalshi masala, red chili powder, lemon juice, ginger-garlic paste, rice flour, semolina, oil, salt to taste. Combine the mixture well.
2) Add the stuffing in the pocket of the pomfret so that it is completely filled.
3) Apply the mixture prepared in step1 on both sides of the pomfret to see that it cover the entire fish
4) Tie the cotton thread around the fish to avoid stuffing spilling out
5) Heat oil in a pan on low flame. Once the oil is warm. Carefully add the fish in oil ensuring that batter is intact on the complete surface.
6) After some minutes, fry the fish on the other sides.
7) Once both sides are crispy, switch off the flame.
Stuffed pomfret is ready to be served.
This recipe goes well with pomfret curry (पापलेट चे कालवण)/ or any other fish curry (कालवण ), rice(भात ), roti (चपाती) or rice roti (तांदूळाची भाकरी).
